Black Knight Pub

The Black Knight Pub (BKP) is a Scottish themed pub located in downtown Yellowknife in the Northwest territories and has been in business since 1997. We are the premiere bar and casual restaurant in Yellowknife. Our total staff compliment including casual in both aspects of our operation is approximately 40 people.

The kitchen consists of 8 to 10 fulltime and casual staff. The staffing compliment is assigned based on the shift, day, and expected business level.

We own our own building which consists of the BKP and the upper level called the Top Knight (TK). The TK is used for overflow to regular business and has the equipment of a sports bar. The TK is also used for special pub nights and private events such as retirement, season end sport team and corporate Christmas parties. Seating capacity is 115 in the BK and 203 in the TK.

We operate based on our Mission Statement and Code of Business Conduct & Ethical Principles– KnightPrinciples.

Yellowknife is a modern vibrant, diversified, and growing community of 20,000. It is the capital of the NWT and has a cosmopolitan aura, activities and interests not normally found in a community of this size. There are daily direct flights to Edmonton and an all-season highway leading in and out of Yellowknife.

Kitchen Manager

We are looking for an experienced and qualified Kitchen Manager to manage and organize the kitchen’s activities. You will be responsible for overseeing the food preparation, manage kitchen staff, supervise ingredient procurement and ensuring that the kitchen is always up to health codes and safety standards.

To be successful in this role, the ideal candidate will have proven culinary and management experience. In addition to being an excellent communicator, you should also demonstrate outstanding leadership and organizational abilities and the ability to work under pressure with both the front and back of house. The Kitchen Manager will be guest oriented and a team player.

The Kitchen Manager reports to and works closely with the General Manager.

Duties:

· Supervise kitchen employees.

· Foster a climate of cooperation and respect between co-workers along with the ability to take constructive criticism.

· Cooks or directly supervises the cooking of items that require skillful preparation. Control and direct the food preparation process and any other relative activities.

· Construct menus with new or existing culinary creations ensuring the variety and quality of the servings.

· Plan, price and execute menus in collaboration with other colleagues.

· Monitor inventory levels and perform weekly inventory assessments. Order materials, supplies, and ingredients based on demand.

· Manage ingredients that should be frequently available daily.

· Suggest new ways of presentation of dishes.

· Suggest new rules and procedures for optimizing the cooking process.

· Give attention productivity of the kitchen such as speed and food quality.

· Remedy any problems or defects by arranging for repairs and equipment replacement when necessary.

· Interview, select, train, supervise, counsel, and discipline all kitchen employees.

· Maintain records of attendance.

· Comply with nutrition and sanitation regulations and safety standards.

· Ensure adherence to all relevant health, safety and hygiene standards.

Qualifications:

· Proven experience as Kitchen Manager with 3 years minimum.

· Exceptional proven ability in kitchen management.

· Ability to work well in a stressful and fast-paced environment.

· Ability in delegating responsibilities and monitoring progress.

· Outstanding communication and leadership skills.

· Up to date with culinary trends and optimized kitchen processes.

· Good understanding of useful computer programs (MS Office, restaurant management software, POS).

· Credentials in health and safety training.

· Completion of a recognized Culinary program or equivalent experience in the industry.

· Excellent problem-solving and conflict management abilities.

Compensation

Compensation will be in the range of $65,000 – $70,000 depending on qualifications and experience. A portion of the salary will be designated as a tax-free Northern Allowance. The following benefits are also offered:

· Reimbursement, with receipts, for medical, life and/or dental expenses annually. Amount to be negotiated.

· 3 weeks annual leave.

· Cell Phone Allowance.

· Potential for a vacation allowance.

· Other benefits to be considered.

A moving allowance and assistance will be considered for a successful candidate outside of Yellowknife.
