General Manager of Restaurant Operations

ROLE

The main role of the General Manager of Restaurant Operations will be to manage the day-to-day operations of the Kitchen, Lounge, Patio and reporting directly to Ownership. This individual will be primarily responsible for implementing the strategy and objective of the company and ownership.

The General Manager of Restaurant Operations will oversee all lounge, patio, and kitchen operations. This will include managing and ordering all of the supplies and inventory for the restaurant side of the business, including food, alcohol, and non-alcoholic options. They will manage the supply chain (in-house & out of house), staffing, operational budgeting, customer relations, and front of house facility management. This role is responsible for all processes necessary to ensure the restaurant side of the business is operating efficiently, maintaining the highest quality standards, and producing volumes to match demand.

This individual must have a comprehensive understanding restaurant operations management, brewery manufacturing operations, and exceptional leadership skills.

This individual must have a degree in Business Management or equivalent, and 5+ years of experience in the Craft Brewing industry or similar field.

· Strong multitasking and troubleshooting skills.

· Solid experience with Word, Excel and QuickBooks.

· Extensive knowledge of the brewing process.

Pay Type: - Hourly (based on full time hours, yearly pay will be between $75,000 and $95,000)

Job Description (General Manager of Restaurant Operations)

The General Manager of Restaurant Operation’s duties will include all of the following (plus any other tasks they may be asked to perform by the CEO and Ownership):

Company Performance

- The main responsibility is to ensure the restaurant operations are profitable.

- Monthly performance meetings with ownership will focus on company KPIs, benchmarking performance, and strategizing ways of improving company performance.

- The General Manager of Restaurant Operations will focus on the efficiency of the day-to-day operations of the Front of House to achieve company and ownership goals.

- They will report directly to ownership, where the ownership’s primary responsibilities will be company vision and long term goals.

Team Work

- Conduct training and coaching of Serving Staff and Kitchen Staff, including regular performance evaluations and disciplinary measures.

- Collaborate with the Head Brewer, Lead Brewers, Kitchen Leaders, Sales Managers, Warehouse Managers, etc to create an efficient, fun, and productive work environment.

- Work with Ownership, the Brewing Team and the Sales Team to forecast and meet production demand.

- Will work and host all special events, being the primary point of contact for staff and customers.

- Will fill in for staff sick days and no-shows or find appropriate cover.

Lounge and Patio Operations

- The on-premise lounge and kitchen represent a major part of the company’s operations. The Manager will ensure the Front of House and Kitchen operations are working well as a team, are efficient, profitable, and staff morale is high.

- Responsibility will include scheduling all serving staff appropriately, matching skill sets to work demand for every day of the week.

- Lounge KPIs must be monitored regularly, keeping a close eye on all costs associated with the department, and ensuring waste is minimized.

- The Lounge primary labour will not exceed 10% of total Front of House Sales.

- The Manager will be expected to come up with regular drink features.

- The Manager will be a main leader for Events, which includes coming up with event ideas, organizing and planning events, and coming up with food and drink specials for events.

- The Manager will help promote events to customers and around tow.

- The Manager will be responsible for printing all menus as needed.

- The Manager will be responsible for managing guest taps, ciders, wines, and non-alcoholic options.

- The main service we provide is FUN! The Manager must work hard to ensure we meet the company’s Lounge and Patio vision of a Fun and Happy place for people to enjoy their time!

Serving and Hosting

- The primary daily activity of the Manager will be serving. This is expected to take up the majority of the Managers time. A set amount of time will be set aside weekly to insure all administrative tasks can be completed.

- Though all servers are expected to greet customers, this role is more emphasized with the General Manager of Restaurant Operations, which would include greeting customers as they enter, providing information to customers, providing quality checks for all guests, and being a general host in the lounge and patio to ensure a fun and inviting atmosphere.

Training servers

- Training all new servers on our opening procedures, closing procedures, and daily cleaning tasks.

- Training all new servers on proper beer pouring, proper cocktail making, proper wine and cider pouring, and proper use of the espresso machine.

- Training all new servers on Beer Knowledge - Servers need to know the basic brewing process, a comprehensive knowledge of all Gladstone Beers, and knowledge of all guest beers, Gladstone Cocktails, and all other products we serve.

- Training all new servers on consistent, fast, and accurate input of all orders into Square POS.

- Training all new servers on proper procedures for delivering food to tables, bussing tables, and cleaning tables.

- Training all new servers on monitoring the indoor lounges and patio for cleanliness, quick table cleans when customers leave, and quality checks with customers.

- Training all new servers on monitoring the behavior of patrons to ensure a fun and inviting atmosphere in the lounges and on the patio.

- Ongoing monitoring and training of all serving staff to ensure they are performing all tasks to the expectations of the Ownership Team.

Kitchen Operations

- Responsible for scheduling all kitchen staff and maintaining a 30% labour cost to food sales ratio.

- Responsible for ordering all food and supplies for the kitchen.

- Working closely with the Head Cook to insure food costs do not exceed 30%.

- Working with Ownership and the Head Cook to update menu items, come up with new menu items, and make changes to the menu to increase business and sales for the business.

- Working with the Head Cook to come up with Food Specials and promoting food specials.

- Working closely with the Head Cook for special event menus, ensuring proper food inventory levels, and promoting special event menus.

Inventory Management

- Daily management of all consumable Lounge inventory including, but not limited to Gladstone Beer on tap and cans for off-sales, Guest Beer, Wine, Cider, Non-Alcoholic options, snacks, and Merchandise, etc.

- Daily management of all lounge cleaning and washroom supplies including, but not limited to dishwashing chemicals, floor cleaning chemicals, table cleaning chemicals, bar rags, paper towels and toilet paper for the bathrooms, and bathroom cleaning chemicals.

- Ordering all inventory to insure we never run out of these aforementioned products, but not over-ordering as to have too much inventory on hand.

- Maintaining our Liquor Inventory log (this log includes all our DOC60’s for all non-Gladstone alcoholic beverages we sell, including the receipts from Government Liquor Stores).

Main point of Contact

- Main point of contact with the Liquor Inspector.

- Main point of contact with the Health Inspector.

- Main point of contact with the Fire Inspector.

- Responsible for ensuring we are compliant with the rules and regulations of the Liquor Control Board. This means being familiar and up to date on the rules set out in the Manufacturers Terms and Conditions.

- Managing liquor licence compliance, such as:

o Insuring all serving staff have up to date Serving it Right (SIR) certification.

o Insuring our SIR log is up to date and easily available to the liquor inspector.

o Insuring our Liquor Licence is properly displayed and accessible along with licence floor plan.

o Insuring we have properly displayed mandatory liquor licence material.

- Managing liquor compliance regarding over-service and inappropriate behaviour.

- Keeping up to date logs in our log books regarding any incidents that may happen, making sure these logs are dated and organized.

Maintenance

- Maintenance of all FOH Equipment including, but not limited to the glass washer, POS Tablets, Product Coolers, Bar Wells, Ice Machines, Kegerators, Stereo Equipment, and Sinks. When there are issues the Lounge Manager will be expected to troubleshoot the problems, and if they cannot fix them bring the issues up to the Maintenance team and Ownership and if necessary call the appropriate technician to come fix the problem.

- Maintenance of FOH fixtures including but not limited to tables, chairs, doors, toilets, etc. When there are issues these will either be fixed by the Manager (easy fixes) or brought to the attention of the Maintenance Team and Ownership.
