Rosewood Hotel Georgia is looking for an Executive Sous Chef.

As an Executive Sous Chef you will be reporting to the Executive Chef, the Executive Sous Chef will assist in leading the daily operations of the culinary team in all F&B Outlets, Banqueting and In-Room Dinning.

Key Responsibilities
  • Maintain up-to-date knowledge and ensure compliance with policies, service procedures and standards.
  • Research & develop new trends in experiential dinning, local & International Cuisine. Create new menu items, test, and write recipes.
  • Monitor and review daily revenue reports, labor reports, food cost and all other F&B reports, adjusting where necessary to ensure costs in line with budget and revenues.
  • Resolve any discrepancies with the Executive Chef and/or Director of Finance. Minimize waste and maintain controls to control food and labor costs within forecast.
  • Interact with guests by having presence at outlets and banquets during meal periods and by connecting with guests.
  • Meet with Executive Chef to review schedules, assignments, anticipated business levels, changes and other information pertinent to the job performance.
  • Communicate additions or changes to the assignments as they arise throughout the shift. Identify situations, which compromise the department's standards and delegate these tasks.
  • Document pertinent information in the logbook and follow up on items notated during other shifts.
  • Daily walk through of all kitchens to assure equipment is in proper and safe working condition.
  • Oversee the food ordering to ensure products are meeting predetermined specifications and standards.
  • Ensure proper storage procedures are in place and followed in accordance with Health Department and hotel requirements.
  • Daily briefing with outlet and Banquet managers for VIP information and booking information.
  • Train associates in the correct and safe usage and care of all equipment's in the kitchen.
  • Provide feedback to associates on their performance, coach and manage on issue related to performance, etc. according to hotel standards.
  • Monitor and handle guest feedback and ensuring guest satisfaction.
  • Model a professional, helpful and courteous manner when dealing with guests associates to reflect the Rosewood Brand Standards.
  • Be a "brand ambassador" at all times and ensure brand integrity and clarity in everyday actions and conducts.
  • Other duties as required and assigned.
Job Requirements

Our Ideal Executive Sous Chef Candidate will have
  • A special talent and passion for ensuring you and your team deliver the highest of culinary standards consistently and ensuring every dish is at the center of excellence guest's culinary experience.
  • Minimum of three years previous in kitchen management experience in a luxury hotel environment with extensive knowledge in local and worldly cuisines.
  • Strong knowledge in Banquet Operations and BanquetCuisines.
  • High school diploma. Diploma/degree in Culinary Management preferred with proven record in delivering results in high volume banquet and outlets operations in four/five-star hotels.
  • FoodSafe a must.
  • Excellent presentation and communication skills (both verbal and written) with a focus on guest experience.
  • Ability to exert physical effort in transporting 20 pounds, endure various physical movements throughout the work areas, reach up and down, remain stationary at times throughout work periods.
  • Excellent track records in following safety procedures in kitchen environment that is constantly exposed to heat, high cold, slippery surfaces, and appliances such as stove, oven, dishwasher, cooking top, as well as housekeeping and cleaning tools.
  • Fluency in written an oral communication in English. Additional language will be an asset.
  • Must be proficient and knowledge of Microsoft Office.
  • Must be legally eligible to work in Canada. The hotel is unable to assist candidates in obtaining Canadian work authorization.
